I’m honestly so surprised that I haven’t made this recipe earlier. I feel like most people didn’t like oatmeal raisin cookies as a kid because
- Raisins in cookies = 🤢
- Eating a healthy cookie for dessert = 🥴
But I can promise anyone out there who have had doubts about oatmeal raisin cookies, be prepared, because you will start liking them
Ingredients:
- 2/3 cup (67g) oat flour/blended oats
- 1/3 cup (31g) vanilla protein powder (sub 1/3 cup oat flour and 1 tsp vanilla extract)
- 1/4 cup (50g) brown sugar
- 1 tbsp (10g) chia seeds
- 1/2 cup (120g) yogurt
- Pinch of salt
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 cup (45g) oats
- 1/3 cup (50g) raisins
Directions:
- Blitz 2/3 oats into oat flour in a blender or food processor if needed
- Combine all ingredients
- Let the dough chill in the fridge for 20 minutes
- After 20 minutes, fold oats and raisins into the dough
- Separate into 8 balls and bake at 350°F for 10 minutes
- Allow cookies to chill for a few minutes after removing
- Enjoy!
