Healthy lunch (great for wraps, salads, or by itself!)


π˜Ώπ™šπ™©π™–π™žπ™‘π™¨:
- 1 large sweet potato
- 1 white onion
- 1 can beans
- 1 bell pepper
- 2-3 cloves garlic (sub 3 tsp minced garlic)
- 1-2 tbsp olive oil
- handful of cilantro
- 2 tbsp lime juice
- 2 tbsp balsamic vinegar
- 3 ribs of celery
- Salt & Pepper

(optional) 2 tbsp tomato paste
(optional) 1 tbsp balsamic glaze

π˜Ώπ™žπ™§π™šπ™˜π™©π™žπ™€π™£π™¨:
1) Add your oil, onion, and pepper on a medium low heated pan and sautΓ©
2) Once sautΓ©ed, add in everything; mix; cover for 10-15 minutes
3) Add onto burritos, salads, or eat it as is
