
I am fully into pumpkin season for the entire year. It does not have to be fall to enjoy some good pumpkin spice.
Ingredients:
- 1/2 cup (45g) oats
- scant 1/4 cup (60g) pumpkin purée
- 1/2 cup (120g) milk
- 1 tbsp (14g) maple syrup
- 1/2 tbsp (5g) chia seeds
- 1 tsp pumpkin spice
- Pinch of salt
- 1/2 tsp baking powder
Optional:
- 1 scoop (31g) vanilla protein (I use PEScience)
- Splash of milk
Topped with:
- Nut butter
- Walnuts
- Whipped cream
- Pumpkin seeds
- Preheat oven to 400°F
- Add all the ingredients together, and then blend (optional, but highly recommend)
- Put in oven for 22 minutes
- Top with anything you’d like!
- Enjoy!
