Pumpkin Pie Baked Oats

I am fully into pumpkin season for the entire year. It does not have to be fall to enjoy some good pumpkin spice.


  • 1/2 cup (45g) oats
  • scant 1/4 cup (60g) pumpkin purée
  • 1/2 cup (120g) milk
  • 1 tbsp (14g) maple syrup
  • 1/2 tbsp (5g) chia seeds
  • 1 tsp pumpkin spice
  • Pinch of salt
  • 1/2 tsp baking powder


  • 1 scoop (31g) vanilla protein (I use PEScience)
  • Splash of milk

Topped with:

  • Nut butter
  • Walnuts
  • Whipped cream
  • Pumpkin seeds
  1. Preheat oven to 400°F
  2. Add all the ingredients together, and then blend (optional, but highly recommend)
  3. Put in oven for 22 minutes
  4. Top with anything you’d like!
  5. Enjoy!
